This dish is a perfectly refreshing warm weather soup.
Ingredients:
3 tablespoon oil
1 medium onion, chopped
3 cups peas
2 1/2 cups canned chicken broth
2/3 tsp buttermilk
1/2 cup raw cashews
1 1/2 tsp garam masala
2 tablespoon mint leaves, rinsed and chopped
2 medium carrots, coarsly shredded
2 tsp lime juice
1 tsp sesame oil
2 tsp black pepper
Salt to taste
Method to prepare this recipe:
- Heat 1 tablespoon oil in a large saucepan over medium heat.
- Add onions for about 5 minutes, until softened.
- Add peas and chicken broth, until peas are tender, about 5 minutes.
- Transfer the soup mixture and mint to a blender, strain through a medium sieve into a medium bowl.
- Add and stir buttermilk , salt and pepper to taste.
- Cover and refrigerate until ready to serve.
- Now, heat 1/2 tablespoon oil in a pan Heat cashews, until they begin to toast, about 3 minutes.
- Then, heat remaining oil in a pan.
- Add garam masala, refrigerated soup and cashews and mix well.Let it boil for about 3 minutes.
- Now, it is ready to serve hot.
