I would like to share one of my favorite and delicious mushroom soup. It is also very easy to prepare.
Ingredients: (6 serving 1 cup each)
1 ounce dried Porcini Mushrooms
2 cups sliced White Mushrooms
1 quart Chicken Stock
1 small sized Onion
1 tsp Garlic Paste
2 tsp Butter
2 tsp Flour
3 tsp Lemon Juice
½ cup Coriander Leaves (Cilantro)
1 tsp Pepper
Salt to taste
Method to prepare this recipe:
- Soak porcini mushrooms in boiling water in small bowl. Let it boil for about 20 minutes, until it is softened. Remove porcini from bowl.
- Chop onion into thin slices.
- Melt butter in a large saucepan over a medium flame.
- Fry white mushrooms, onion and garlic paste in butter until it turns into light brown.
- Sprinkle with flour and cook for a minute, add chicken stock, porcini and stir continuously.
- Allow it to boil until mushrooms become soft, about 10 minutes.
- Add lemon juice and chopped coriander leaves.
- Add pepper and salt .stir and allow it to boil for 5 minutes.
- Now it is ready to serve.
