TOMATO CORN CHILLI SOUP

Ingredients:
8 servings
Preparation time: 30 minutes

1 tsp oil
4 cups chicken broth
1 medium onion, chopped
1 medium capsicum ( red bell pepper ), chopped
3 cloves garlic, minced
2 cups fresh or frozen corn kernels
5 green chillies, chopped
1 medium tomato, crushed
1/2 tsp black pepper powder
1/2 tablespoon red chilli powder
1/2 tablespoon cumin powder
4 cups water
Salt to taste

Method to prepare this recipe:

  • Heat oil in a large saucepan.
  • Fry onion, capsicum, garlic and green chillies for about 3 minutes, until onion begins to soften.
  • Add chilli powder, cumin and black pepper powder, fry for 2 minutes.
  • Add remaining chicken broth and fry for 5 minutes.
  • Then, add tomato, salt and water.
  • Bring to a boil, reduce heat, and simmer for 15 minutes.
  • Add and stir corn, simmer for 5 more minutes.
  • Serve hot.
