VEGETABLE SAAGU (KURMA)

Ingredients:

List 1:

4 tsp oil
1 tsp mustard seeds
Few curry leaves
1 small onion, chopped
1 small tomato, chopped
10-12 Beans, chopped
1 small carrot, chopped
1 cup green peas
1 small potato, chopped
1 small cabbage, chopped
1 cup chopped cauliflower

List 2:

1 cup grated coconut
8 green chillies
1 tsp coriander powder (dhaniya)
1 tsp ginger garlic paste
1/2 tsp cardomom powder
1/2 cumin powder
1 small onion, chopped
1/2 tsp turmeric
Salt to taste
Few coriander leaves

Method:

  • Grind all the ingredients in list 2 and make into thin paste.
  • In a large saucepan, heat oil and add all the ingredients in list 1, one after another, fry for 10 minutes.
  • Add the grinded paste and mix well.
  • Add enough water (2-3 cups) and allow it to boil for 10 minutes, until all the vegetables has been cooked.
  • Serve with chapathies or rice.
